A Dish We Call Squish
This concoction happened by accident one day. I didn’t know what to make for dinner, so the
only thing I could think of was to throw everything we had into a pan and hope for the best. It was a happy accident! For those days where you feel like you need more veggies but can’t stand another salad, or you need something easy but filling, I present to you, Squish!!
* Butter and seasonings are always based on your own preference, but I did include the amount we usually use.
Play around with it and see what you like!

Note: this recipe is served over brown rice, or quinoa, so have your own recipe for that handy.
INGREDIENTS
2-3 Green Zucchinis
2-3 Yellow Zucchinis/Squash (is there a difference??)
1 Yellow/Sweet Onion (Medium to Large in size)
3-4 Bell Peppers (Green, Red, Orange, Yellow...the more color, the better!)
5-7oz Broccoli Florets (or ½ a frozen bag)
5-7oz Corn (or ½ a frozen bag)
Vegan Butter to taste (*I’m generous with 3-4 tablespoons)
‘Mrs. Dash Original Blend (Salt Free)’ to taste (*2 tablespoons)
Salt to taste (*1 teaspoon)
Garlic to taste (*1 tablespoon minced)
DIRECTIONS
In a large skillet, combine all ingredients, cutting zucchini/squash, onions and bell peppers into bite-sized pieces.
Heat the stove to medium heat.
Cook until all veggies are soft/tender (depending on how soft you like your veggies), stirring often and allowing the vegetables to brown slightly; approx. 25mins.
Serve over brown rice or quinoa and enjoy!
*Extra Little Fuddha Tips*
-Buy pre-cut zucchini/squash, peppers and onion to save time (and tears). You can find them in the produce section at some grocery stores.
-Buy broccoli and corn frozen, it makes everything easier and still turns out great! We like to buy ours in bulk at BJ’s, that way I can just reach in the freezer and throw some broccoli or corn into recipies in a pinch.
-Our butter of choice is Earth Balance, vegan soy-free buttery spread
